Strawberry Cupcakes Recipe
Yield: 12 cupcakes
1-1/2 cups flour
1/8 tsp salt
1 tsp baking powder
2/3 cup strawberries
1 tsp vanilla 1/4 cup milk (2% or whole), room temp.
1/2 cup unsalted butter (1 stick), room temp.
1 cup sugar
2 egg whites (large), room temp.
1 egg (large), room temp.
1. Preheat oven to 350.
2. Sift the flour.
3. Whisk flour, salt, and baking powder; then set aside.
4. Puree the strawberries in some type of blender of food processor. (You need 1/3 cup of strawberry puree.)
6. Mix together strawberry puree, vanilla and milk; then set aside.
7. With a mixer or hand mixer, cream butter until fluffy and light.
8. Add sugar gradually and beat until fluffy and very well combined.
9. Slowly add egg whites and egg just until blended.
10. Slowly add half of the flour mixture.
11. Mix just until blended.
12. Add the milk mixture.
13. Mix just until blended.
14. Slowly add the rest of the flour mixture just until blended.
15. Line a muffin tin (12-cup) with cupcake liners.
16. Divide the batter evenly among the 12 muffin cups.
17. Bake 22-25 mins, or just until the tops are dry to the touch.
18. Transfer the muffin tin to a cooling rack to let the cupcakes cool.
